- 2 Pork Chops
- 2 cups Radishes
- 1 cup Basil
- 2 cloves Garlic
- Salt & Pepper
- 2 tbsp Olive Oil
- Preheat oven to 400 degrees. Wash and half radishes. Mince Garlic. Grease baking sheet with oil or cooking spray. Toss radishes in olive oil, garlic, salt, pepper, and rosemary mixture. Roast for 30 - 40 mins flipping occasionally.
- Pat pork dry. Mince 1 clove garlic and basil. Rub on pork. Lightly salt and pepper. Let pork sit for 20 mins or more. Oil skillet. Heat to medium - high. Add pork and let cook for about 3 mins until it forms a dark brown crust. Flip and turn the heat down to medium and cook for 8-10 mins. Let rest for 5 mins.
Brown Sugar Soaked Peaches (optional)
In small sauce pan add 1 cup water, 4 tbsp brown sugar and 1 tbsp vanilla. Stir and bring to a boil. Add sliced peaches. Turn heat to low and simmer for 5 mins flipping after 3 mins.
